A recipe /'resɪpi:/ is instructions for how to cook a dish of food.


Genre conventions[edit | edit source]

Written recipes follow certain genre conventions:

  • A summary giving details of the serving e.g. “serves 2,” preparation and cooking time, and (sometimes) difficulty.
  • A list of ingredients, with quantities required of each ingredient (e.g. 2 small onions, or 100g self-raising flour (the "of" is often dropped)
  • Instructions, using the imperative mood, using cooking-related lexis.
  • Another grammatical feature is the unmarked ellipsis of subject + copular be after prepositions with adjectives. Easier to show than to explain: e.g. Finely chop the onion. Fry until brown = Finely chop the onion. Fry [the onion] until [it is] brown.
  • Nutritional information.

Also within this genre are video presentations found on cookery shows.

Here, as an example, is a recipe for “bubble and squeak:”

Bubble and Squeak

Serves: 4

Ingredients:

  • 4 cups mashed potatoes
  • 4 cups chopped cooked cabbage or Brussels sprouts
  • 1 cup chopped cooked carrots
  • 1 cup chopped cooked onion
  • 4 tablespoons butter
  • Salt and pepper to taste
  • Optional: leftover cooked meat, such as roast beef, ham, or corned beef, chopped

Instructions:

In a large bowl, mix together the mashed potatoes, chopped cabbage or Brussels sprouts, chopped carrots, and chopped onion. If you’re adding leftover cooked meat, chop it up and add it to the bowl as well.

Heat the butter in a large frying pan over medium-high heat. Once the butter has melted, add the potato mixture to the pan and spread it out evenly.

Cook the bubble and squeak for about 15–20 minutes, stirring occasionally, until it is golden brown and crispy on the outside and heated through. Use a spatula to flip the mixture over halfway through cooking to crisp up the other side.

Season with salt and pepper to taste.

Serve hot, either as a main dish or as a side dish with fried eggs and bacon for a hearty breakfast.
